The fan comes first

Everything in a convection oven depends on the blower fan. When the fan motor fails or the fan wheel comes loose, the oven heats unevenly or — on many models — the safety circuit won’t let the burner or elements run at all. The door switch also stops the fan and the heat when the door opens; a worn switch can leave the oven cold after the door closes again.

Heating problems

• Gas ovens: a failed igniter or pilot, a dirty flame sensor, a gas valve or the combustion blower.
• Electric ovens: burned-out elements and contactors. Contactors switch heavy current all day, and pitted contacts are a common reason an electric convection oven heats slowly or not at all.
• Both: a thermostat that has drifted out of calibration or a tripped high-limit switch.

Doors and uneven baking

Many convection ovens have two doors that open together on a chain or linkage. A stretched chain or a worn hinge lets one door sit open slightly, and the heat escapes on that side. Worn door gaskets do the same. If one side of the pan always comes out lighter, check the doors first.
